Turkey Stuffing
100g Soft breadcrumbs
250g Cooking apples – peeled, cored & finely diced
1 ˝ lbs Plain pork sausage meat
200g Chestnuts
1 leek, finely chopped
1 Medium onion, finely chopped
100g Button mushrooms, finely chopped
2 Cloves garlic, finely chopped
Zest of 1 lemon
Bunch of parsley, chopped
2 tsp thyme leaves
10 needles rosemary, finely chopped
Salt & pepper
  • Sweat the leeks, onions, mushrooms, garlic and apples in a little butter or olive oil until soft. In a big bowl mix this lot together with all the other ingredients.
  • To check for seasoning fry a little ‘cake’ of the mixture, allow to cool and taste. You may need to add a little more salt and pepper
