Sprouts with Pumpkin and Chestnuts
Serves 8-10

Ingredients
1 stalk of sprouts, taken off the stalk and halved if large
1 medium orange squash or pumpkin, peeled, deseeded and cut into 1cm cubes
340g/12oz chestnuts, cooked, peeled and chopped roughly
85g/3oz butter
2 tbsp chopped fresh parsley
salt and freshly ground black pepper

Method
  • Melt the butter in a large pan and add the pumpkin and sprouts. Season well, cover and cook very gently until both are tender, stirring from time to time.
  • Stir in the cooked chestnuts and heat through.
  • Stir in the parsley and serve at once.
