SPINACH, MANGO AND SMOKED TOFU SALAD
SERVES 12
550G SMOKED TOFU
2 TBSP OLIVE OIL
2 TBSP TAMARI
2 TBSP SESAME SEEDS
600G FRESH SPINACH (baby if possible)LEAVES
450G MOIST DRIED MANGO(OR FRESH) CUT INTO THIN SLIVERS
DRESSING
300ML MANGO JUICE
2 TBSP OLIVE OIL
2 TBSP TAMARI
1 TSP BALSAMIC VINEGAR
DASH OF HOT PEPPER SAUCE
SALT AND FRESHLY GROUND BLACK PEPPER
  • Saute the smoked tofu with the olive oil, tamari and sesame seeds until crisp and browned, adding 1/2 tbsp water to prevent sticking.
  • to make the dressing, put all the ingredients into a bowl and whisk together.
  • place spinach leaves in a serving dish and scatter over tofu and mango, dress the salad and leave to stand for 10 mins prior to serving
