Markus’s Root Veg Slaw

Ingredients
½ celeriac, peeled
1-2 beetroot, peeled
2-3 carrots, peeled
Dressing made from vinegar, olive oil, lemon juice
Salt and pepper
Horseradish (optional)

Method
Grate the celeriac, beetroot and carrots into a large bowl and cover with vinaigrette dressing.

A teaspoonful of horseradish adds an extra warming kick.
