Root Vegetable Gratin
You can vary the cheese according to taste. Serves 4 as a main
1kg root vegetables (celeriac, potato and swede are a good mixture)
1 lg onion, peeled and sliced thinly
15g Butter plus extra for greasing dish
1 large onion, thinly sliced
125g hard cheese, which ever you prefer, hard goats cheese is unusual and delicious, grated
Salt and pepper
140ml thick cream
Dash of milk
Fresh nutmeg, grated
  • Preheat the oven to 180°C, gas mark 4.
  • Layer the vegetables in a greased oven dish with the onion and cheese, seasoning each layer as you go.
  • Finish with a scattering of the cheese.
  • Mix together the cream and milk and pour over the veg. Dot with the butter and sprinkle with nutmeg.
  • Cook for 1 hour or until the top is bubbling and golden brown.
