ROASTED GARLIC DIP
8 LARGE HEADS GREEN GARLIC
12 TBSP OLIVE OIL
FEW SPRIGS FRESH THYME
500G SOFT CHEESE, CHOOSE FROM GOATS, RICOTTA OR STANDARD CREAM CHEESE
4 TBSP CHOPPED FRESH HERBS-PARSLEY/CHIVES/TARRAGON
SQUEEZE OF LEMON JUICE
- Heat the oven to gas 5/190c. Cut a slice off the top of each head of garlic and place on some foil. Spoon over two thirds of the olive oil, tuck in the thyme and season with salt and pepper.
- Wrap up and bake for about 1 hour until the garlic is very soft. Cool.
- Beat the cheese in bowl until smooth. Squeeze the roasted garlic out of its skin into the cheese and mash with a fork until smoothish.
- Beat in sufficient oil until to get a good dipping consistency. Beat in the herbs and season to taste.
