A whole head of fresh summer garlic split through the centre, drizzled with olive oil and scattered with thyme leaves has an especially mild sweetness and is perfect for spreading on toast. About half an hour in a hot oven should make it soft enough to squash between your fingers. It is also delicious with other roasted vegetables, or roast chicken.
