Red Cabbage, Sweet and Sour
(from Boxing Clever, serves 4-6)
Ingredients:
1 tbsp olive oil
700g red cabbage, chopped
225g carrots, grated
1 onion, finely chopped
2 cloves garlic, crushed
½ tsp ground ginger
¼ cayenne pepper
For the blender:
125g pitted prunes
150ml apple juice
4 tbsp vinegar
2 tbsp soy sauce
2 tbsp cornflour
Method:
- Heat the oil in a pan and stir fry the garlic for one minute.
- In a large pan, heat the oil and add cabbage, carrots, onion, garlic, ginger and cayenne pepper. Cook until vegetables are crisp
tender, about 10 minutes.
- Put the rest of the ingredients into a blender and puree until smooth.
- Add to the cooked vegetables and mix together. Continue cooking, stirring frequently until the liquid is thickened.
