RED CABBAGE SLAW
SERVES 8
450G RED CABBAGE, CORED
4 MEDIUM CARROTS, PEELED
100G RAW BEETROOT, PEELED
4 GREEN APPLES
2 RED ONIONS, PEELED AND FINELY SLICED
2 CLOVES GARLIC, PEELED AND CRUSHED

FOR THE DRESSING
4 TBSP GREEK YOGHURT
300ML MAYONNAISE
1 TBSP ORANGE JUICE
1 TBSP RED WINE VINEGAR
SALT AND FRESHLY GROUND BLACK PEPPER
2 TBSP CHOPPED FRESH CHIVES
  • Coarsely grate or shred the cabbage, carrots and beetroot, using a food processor fitted with a medium grating disc.
  • Quarter, core and grate the apples. Place in a large bowl with the grated vegetables, onions and garlic.
  • To make the dressing, beat the mayonnaise, yoghurt, orange juice, vinegar and seasoning together in a bowl. Stir in the chives. Spoon the dressing over the vegetables and toss until well coated.
