Purple Sprouting Broccoli Pesto
(From Boxing Clever Cook Book)
Makes about 3 x 500g jars

Ingredients:
450g purple sprouting broccoli, chopped
175ml olive oil
175g Parmesan cheese, grated
8 sun dried tomatoes
125g unsalted cashew nuts
3 cloves of garlic
Salt and freshly ground black pepper to taste

Method:
  • Immerse the broccoli into boiling salted water, bring to the boil, reduce the heat and simmer until just tender, about 5 minutes. Drain and cool.
  • In a blender or food processor, puree the cooled broccoli, plus the rest of the ingredients until smooth.
  • Serve over hot pasta
