Parsnip and Apple Bake with Coriander and Parsley
(serves 4, from Boxing Clever Cookbook)

Ingredients:

450g parsnips, peeled and grated
1 medium apple, grated & mixed with lemon juice
1 onion finely chopped
1 tbsp fresh coriander, chopped
1 tbsp fresh parsley, chopped
2 eggs, beaten
Salt and pepper to taste

Method:
  • Preheat the oven to 180°c, gas mark 4.
  • Mix the parsnips, apple, onion, coriander and parsley together. Add the egg to bind the mixture. Season to taste.
  • Put the mixture into a greased baking dish and bake for about 25 minutes or until brown.
