MEL'S FANTASTIC TOMATO SOUP
SERVES 16
100G BUTTER
4 ONIONS ROUGHLY CHOPPED
4 CELERY STICKS ROUGHLY CHOPPED
10 CLOVES OF GARLIC CHOPPED
1600G OF TINNED CHOPPED TOMATOES
6 TBSP TOMATO KETCHUP
3 LITRES OF VEGETABLE STOCK
4-5 TBSP OF CREAMED HORSERADISH SAUCE
300ML OF CREAM
SALT AND FRESHLY GROUND BLACK PEPPER
- Melt the butter in a large saucepan and cook the onion and celery for about 10 minutes until softened. Add the garlic and cook for another minute.
- tip in the tomatoes, ketchup and stock and season well. Bring to the boil, then simmer for 15 minutes. Puree until smooth, return to the pan and add the horseradish, cream and check the seasoning.
