Leeks with Greens and Pasta
from Boxing Clever Cook Book
(serves 4-6)
Ingredients:
3 tbsp olive oil
450g leeks, washed and sliced
2 cloves garlic, crushed
900g mixed greens, chopped (you can use whatever you have – sprout tops, cabbage, chard, beet greens, sprouting broccoli…)
Salt and freshly ground black pepper to taste
450g pasta
1tbsp Parmesan cheese to garnish
Method:
- In a large pan, heat the oil. Add the leeks and sauté until very soft, about 10 minutes.
- Add the garlic and sauté for about 10 minutes.
- Add chopped greens and continue to cook for about another 5-8 minutes or until greens are soft and tender. Season well.
- Meanwhile, cook the pasta. Drain and toss with greens and leeks.
- Add another tbsp of olive oil to the mixture.
- Sprinkle with Parmesan cheese and serve.
