Kale, chard or spinach with garlic, parsley and parmesan
(From Boxing Clever Cookbook)
Serves 4

2 tbsp olive or vegetable oil
2 cloves garlic, crushed
1 onion, finely chopped
350g kale or other leafy green, cut into strips
1tbsp chopped parsley
4 tbsp water
Salt and freshly ground pepper to taste
50g parmesan cheese, grated

Method:
  • Heat the oil in a pan. Add the garlic and onion and fry gently for 2 minutes.
  • Add the greens and parsley. Stir for a few minutes so the kale is coated in oil.
  • Add about 4 tbsp of water. Bring to the boil, cover and simmer until tender. Stir occasionally and don’t allow the pan to boil dry. Add a little more water
