Mel’s Green Onion and Green Garlic Frittata
Ingredients:
Half a bulb of green garlic and the whole green stem, finely chopped (or a few cloves of regular garlic)
1 whole fresh onion, finely chopped and the green tops finely chopped and set to one side
A handful of chives, finely chopped
4 eggs, beaten
Salt and pepper
1 tablespoon of olive or rapeseed oil.
Method
- Start by placing the olive oil in a small frying pan (about 20cm in
diameter) and place over a medium to low heat.
- Add the finely chopped onion and green garlic, and sweat gently for 8 to 10 minutes until softened, but not browned.
- Next, add the chopped green onion tops and the chives, quickly followed by the egg mixture and a good twist of salt and pepper. Make sure the mixture is evenly dispersed, then cover with a lid or plate, turn to a low heat and leave to cook for ten minutes or until golden brown on the underside.
- Turn the frittata and cook for a further 2-5 minutes, then remove from the heat.
- Serve with a simple leaf salad, some steamed new potatoes or a slice of crusty bread. Enjoy!
