Chilled Cucumber and Dill Soup
large cucumber, peeled, halved and seeds removed
10floz (290ml) soured cream
20floz (570ml) low fat yogurt
chives
8 spring onions
a few sprigs of fresh dill
juice of half a lemon
Salt and pepper
  • Grate or blend the cucumber
  • Chop 4-5 spring onions very fine
  • Chop some dill very fine
  • Mix it all together by hand with the yogurt and soured cream
  • Season to your taste
  • Iif the soup is to thick, add some milk
  • Leave to chill for a few hours
  • Just before serving decorate with some sprigs of dill, spring onions or chives or ice cubes, optional
