Chilled Cucumber and Dill Soup
large cucumber, peeled, halved and seeds removed
10floz (290ml) soured cream
20floz (570ml) low fat yogurt
chives
8 spring onions
a few sprigs of fresh dill
juice of half a lemon
Salt and pepper
- Grate or blend the cucumber
- Chop 4-5 spring onions very fine
- Chop some dill very fine
- Mix it all together by hand with the yogurt and soured cream
- Season to your taste
- Iif the soup is to thick, add some milk
- Leave to chill for a few hours
- Just before serving decorate with some sprigs of dill, spring onions or chives
or ice cubes, optional
