COURGETTE AND LEMON SALAD
SERVES 12
1.8 KG COURGETTES (MIXED GREEN & YELLOW IF POSS)
GRATED RIND AND JUICE OF 2 LEMONS
HANDFUL OF FRESH OREGANO LEAVES
2 LARGE CLOVES OF GARLIC, CRUSHED
8 TBSP OLIVE OIL
SALT AND FRESHLY GROUND BLACK PEPPER
  • Trim and thinly slice the courgettes.
  • Place in a large bowl, add the lemon rind and juice, oregano, garlic and olive oil.
  • Season generously with salt & pepper, cover and leave to marinate for at least 3 hours before serving.
