BANANA CHOCOLATE CHUNK CAKE
200G SOFTENED BUTTER
200G CASTER SUGAR
4 EGGS
175G PLAIN CHOCOLATE
4 SMAL RIPE BANANAS, MASHED
200G SELF RAISING FLOUR
1 TSP BAKING POWDER
425ML DOUBLE CREAM
4 TBSP ICING SUGAR, SIFTED
PINCH OF MIXED SPICE
  • Cream butter and sugar for 5 minutes until light and fluffy, beat in eggs until smooth. Chop 100g of the chocolate and fold into creamed mixture with flour, baking powder and bananas. Spoon into two greased, base lined 20cm tins and bake for 35 minutes.
  • Whip the cream into soft peaks, then stir in the icing sugar and mixed spice. Use some of the cream to sandwich the two sponges together, then swirl the rest over the top and sides. Melt the remaining chocolate and drizzle over the sides.
