Cavelonero and chickpea balti
(serves 4, based on recipe from our favourite Boxing Clever cook book)
Ingredients::
1 tbsp olive oil
1 medium onion, chopped
2 garlic cloves, crushed
1tsp cumin seeds
1tbsp ground coriander
1 tsp turmeric
225g cavelonero, cut into fine strips
1 x 400g tin of tomatoes
1 x 400g tin chickpeas, drained and rinsed
Salt and freshly ground pepper

Method:
  • Heat oil in a pan and add onion and garlic. Sauté for about 3 minutes.
  • Add cumin seeds, coriander and turmeric, and sauté for another 2-3 minutes.
  • Add the cavelonero, tomatoes and chickpeas. Bring to the boil, reduce the heat and simmer for 5-10 minutes, or until the cavelonero is cooked.
  • Season to taste
  • Serve with rice or chapattis
