CAULIFLOWER CREOLE
(serves 4, from www.cookitsimply.com)
Ingredients:
1 cauliflower
1 tbsp vegetable oil
1 large onion, chopped
1 clove garlic, crushed
400g can tomatoes
25g margarine or butter
1 large green pepper, sliced
1/2 - 1 tsp Tabasco sauce
salt and ground black pepper
Method:
- Heat the oil in a large saucepan, add the onion and garlic and fry for 2-3 minutes, until just tender.
- Stir in the tomatoes. Cover and simmer gently for 20-30 minutes.
- Bring a pan of salted water to the boil, immerse the cauliflower in it and cook for 20 mins, until just tender. Heat the oven to 130C/Gas 2. Drain the cauliflower well, place on a warmed serving dish and keep hot in the oven.
- Add the marg and green pepper to the tomato sauce, stir and simmer for 5 mins. Season with Tabasco sauce, salt and pepper.
- Pour some sauce over the cauliflower, leaving some white showing. Pour the remaining sauce round the sides.
