Carrot, cashew nut and red lentil patties
(from Boxing Clever Cookbook, serves 4
Ingredients
350g red lentils
900ml vegetable stock
2 tbsp vegetable oil
2 cloves garlic, crushed
225g carrots, grated
125g cashew nuts, roughly chopped
4 tbsp mango chutney
1 medium onion, chopped
Salt and freshly ground pepper to taste
Method
- Boil the lentils in the stock, reduce heat and simmer for 15-20 mins until lentils are soft and liquid is absorbed.
- Heat half the oil in a pan and sauté the garlic, carrots and onions until the carrots are tender (about 3-5 mins).
- Add the mango chutney, cashew nuts and lentils. Season and set aside to cool slightly.
- With floured hands, shape the mixture into 8 patties. Sauté them in the remaining oil for about 4 mins each side.
