Broad Beans with Tomatoes and Herbs
Ingredients
350g baby broad beans in their pods
6 spring onions or 1 onions
1 tsp fresh mint
½ tbsp parsley
225g tomatoes
150 ml oil
½ tsp sugar
salt and freshly ground black pepper
½ cup of water

Method
  • Trim the young beans leaving them in the pods.
  • Coarsely chop the onions, tomatoes and herbs.
  • Put all the ingredients in a pan with the oil and seasoning, turn once or twice and add a cupful of water.
  • Cook gently until tender. Season well. Stand for half an hour before serving.
