Braised Celery
1 head celery, strings removed
450g onions, sliced
salt and freshly ground black pepper
600ml chicken or vegetable stock
chopped fresh parsley
- Preheat the oven to 350°F, gas mark 4. Cut the celery into 3 inch (7.5 cm) lengths.
- Arrange in layers with onions in a 1.8l ovenproof dish, seasoning each layer with salt and pepper to taste.
- Pour in the stock. Cover and cook in the oven for 1 hour or until the celery is tender. Sprinkle with parsley and serve.
