Beetroot and Fresh Onion Salad
Ingredient
3 medium sized beetroot
1 medium sized fresh onion
2 - 3 tbsp red wine vinegar
1 tbsp demerara sugar
freshly ground black pepper
chives or parsley
Method
Boil beetroot in salted water until just tender (do not overcook), cool, peel and grate coarsely.
Rinse the onion and slice thinly. Combine all ingredients garnishing with chopped herbs.
