Stir Fry Green Beans, Cherry Toms & Basil
Ingredients
500g green beans, trimmed
1 clove garlic, crushed
Good sized bunch of basil, finely chopped
3 tbsp oil
250g cherry tomatoes, halved
100g walnut halves & 1 tbsp pumpkin seeds, lightly grilled
Method
- Cook green beans in boiling water for 3-5 mins until crispy tender, and drain.
- In large skillet or wok, saute the garlic in hot oil a minute. Add the walnuts and stir-fry another minute. Add the beans, basil and cherry tomatoes; stir-fry 2 minutes or until hot.
- Sprinkle with pumpkin seeds and give it all a final toss.
- Alternative suggestion: use red sweet peppers in place of the cherry toms.
