Recipes:
Roasted beetroot and salsify
Some say these less-than-beautiful black roots taste like oysters,
while others find them similar to artichokes… Here are a few recipe ideas…
- Salsify patties - peel like carrots, boil and mash, then season and fry in small patty shapes.
- Fried salsify sticks - par boil for a few mins, dip in egg, then
breadcrumbs mixed with other seasoning. Fry until golden brown.
- Also … they can be chopped up and added to soups and stews or mixed with other root veg for mash. Or boil and served simply with a little butter. They're easier to peel after boiling, but if you do need to peel first, they discolour quickly, so immerse in cold water and add a little lemon juice.
