Purslane is a wild plant now being cultivated and used as a salad leaf. It grows in the wild in the Mediterranean and is known to be a rich natural source of Omega 3.

Purslane can be eaten raw or cooked, and lends itself to stir fry dishes. Some say it has a slight lemon-like taste and mushroom-like texture. It is relatively easy to grow in more northern climates.
