Vegetarian gravy

45ml/3 tbsp olive oil                                
450g/1lb onions, thinly sliced
45ml/3 tbsp flour (white or wholemeal)   
400-500ml vegetable stock
1 sprig fresh thyme                                 
10ml/2 tsp dark soy sauce
sea salt & ground pepper

Method

  • Put the oil in a small, heavy pan and heat gently. Add the sliced onoins and fry, stirring occasionally for 15-20 minutes until the onions are soft and beginning to brown.
  • Increase the heat slightly and cook for another 20-30 mins, stirring until they are a dark, golden brown
  • Stir in the flour then cook for a few minutes, stirring continuously.
  • Gradually stir in 400ml of the stock. Simmer and stir until thickened, adding more stock if the gravy becomes too thick.
  • Add the thyme, season with salt and pepper then cook slowly stirring frequently for 10-15 mins.
  • Stir in the soy sauce and a little more seasoning if necessary. Add more stock if too thick. Remove the thyme and serve immediately.
