Sage & onion stuffing

4 large onions                                        10 sage leaves
125g breadcrumbs                               40g butter
1 egg yolk (option)                               salt & pepper to taste

Method

  • Peel the onions and simmer in boiling water for 5 minutes. Add the sage leaves for a minute or two to take the edge of their rawness.
  • Chop the onions and sage finely, add the bread, seasoning and
    butter and work the whole lot together with the yolk of an egg just before cooking.
  • Press into a baking dish and cook at 180°C for about 10-30
    minutes.
